My purpose is to be in joy. My name isn't Lydia JOY for no reason. 

We were born to live, not to heal. Not to PERFORM or be busy. Rest is actually the most productive. 

It's time to learn to enjoy your one and only life. Yes, even in these crazy times we are living in. 

I'm over here, enjoying nature, food and connection. How about you? 

With that, in light of the season, I wanted to share one of my favorite homemade healthy treats. I've been making these for the past 10 years or so. 



Heavenly Chocolate Peanut Butter Cups

2 cups dark chocolate (or milk chocolate if you prefer)
2 tablespoons coconut oil
1/2 cup butter
1/2 cup organic natural peanut butter - I use a brand with palm oil (creamy or crunchy)

1 tablespoons honey

1. Melt chocolate and oil in a small mug in the toaster oven on low heat for 4 minutes, additionally in another mug add the butter, peanut butter and honey.

2. Line a mini muffin tin with paper cup liners. Once the chocolate is melted add a small spoonful and tilt the cup to coat it with the chocolate, but don't let it get to the top of the paper cup. Repeat with all the liners then place in the freezer for 5 minutes.

3. Remove from freezer, and to each cup add a dollop of the peanut mixture. Place back in the freezer for another 5 minutes.

4. Remove from freezer and top each cup with remaining chocolate. Freeze again for 5 minutes. Then place in a container in the refrigerator. Let the chocolates sit out for a few minutes before eating.

These chocolates will need to remain refrigerated. Depending on the size of your mini muffin pan, this recipe should make around 32 cups.
